Lemme tell ya this stuff is delicious. I’m kind of a chia seed pudding enthusiast just because of how easy and delicious it is, plus it’s supaaa healthy. It’s perfect for a grab and go breakfast, or a complete post workout meal to get you all recovered up. Plus it’s vegan, paleo, and gluten free if that’s what you’re into!
In case you’re curious, I want to quickly highlight all the fab benefits of chia seeds and chia seed pudding. These wonderful little seeds contain tons of fiber, antioxidants, protein, minerals, and oh so important omega 3 fatty acids. The benefits of these kind of properties include weight loss, bone health, brain health, reduced inflammation, and much more!!
Here’s the recipe friends: Combine 6 tablespoons chia seeds (I used Chosen Foods) with 2 cups nut milk ( I used Califia Farms coconut almond blend), 3 tbs mashed or pureed blueberries, along with a dash of vanilla and optional dab of honey and let sit in fridge for 4 hours or overnight. I also threw a handful or two of frozen blueberries and a splash of water into the blender and mixed that in there too. This makes it deliciously sweet and tangy!!
